Lactose intolerance should not stop you from enjoying the apparent health benefits of yogurt. Soy based yogurts are available in most health shops and even supermarkets. But now researchers from the Institute of Food Engineering for Development at the Polytechnic University of Valencia are coming up with yogurts based on fermented nut milk.
The team have already worked on almond, hazelnut and oats and work with chestnuts is on the horizon. This idea is nothing new in itself, fermenting milk from nuts and cereals is described in DIY fermentation books such as “The Art of Fermentation” by fermentation fanatic Sandor Katz but to develop recipes so that they were available ready-made in the supermarket could appeal to those not able or willing to make it themselves at home.
Nuts are also a good source of many nutrients which should also be present in the yogurt style ferment produced from them.
