Flick the switch on E coli

Researchers at the Agricultural Research Station, Fort Valley State University have published a paper on using low voltage alternating electrical current to reduce E.coli 0157 on the surface of beef. This follows their paper published in February last year on using direct current for the same purposes.

In both cases the beef was immersed in a sodium salt (NaCl) solution and differing currents, frequencies and time durations were tested. The bacterial load was reduced using both types of current.
