You can’t unbake a cake…

…but you may be able to uncook an egg, at least, that seems to the news published in the Journal ChemBioChem Communications.

Apparently many proteins are produced using bacteria systems, in other words, the gene for producing a desired protein is inserted into that of a bacteria and it generates that protein for us. The problem is that these proteins tend to all stick together and there is a cost of time and money to get them back into the correct shape.

The researchers demonstrated their technique by boiling egg white and then treating it with urea and used shear forces to unfold the proteins.

Urea, by the way, makes up most of your urine as the body uses it to excrete nitrogen. It is also a good fertilizer. Ask any allotment owner and I’m sure they will tell you.
